Mediterranean Salad

Ingredients
    For the Salad:
  • 4 cups mixed salad greens (such as romaine, spinach, and arugula)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup Kalamata olives (pitted)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup parsley (chopped fresh)
  • 1/4 cup mint (chopped fresh)
  • Salt (to taste)
  • black pepper (to taste)
  • For the Dressing:
  • 2 tbsp Volcano Burst lime juice
  • 1/4 cup extra virgin olive oil
  • 1 tsp honey (optional, for sweetness)
  • 1 clove garlic (minced)
  • 1 tsp Dijon mustard
  • Salt (to taste)
  • black pepper (to taste)
Instructions
  1. In a large salad bowl, combine the mixed salad greens, halved cherry tomatoes, diced cucumber, thinly sliced red onion, pitted Kalamata olives, crumbled feta cheese, chopped fresh parsley, and chopped fresh mint. Toss gently to combine.
  2. In a small bowl, whisk together the extra virgin olive oil, Volcano Burst lime juice, minced garlic, Dijon mustard, honey (if using), salt, and black pepper to make the dressing.
  3. Pour the dressing over the salad ingredients in the large bowl and toss gently to coat everything evenly.
  4. Taste and adjust seasoning if necessary.
  5. Serve the Mediterranean salad immediately as a refreshing and healthy side dish or main course
