In a small saucepan, combine the granulated sugar and 1/2 cup of water. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. This will create a simple syrup. Remove from heat and let it cool to room temperature.

In a large pitcher, combine the Italian Volcano lemon juice and the prepared simple syrup. Stir well to mix.

Just before serving, add the chilled sparkling water or club soda to the pitcher with the lemon mixture. Stir gently to combine.

Fill glasses with ice cubes.

Pour the Sparkling Lemonade Mocktail into the prepared glasses.

Garnish each glass with a sprig of fresh mint, if desired.
