  1. In a small bowl or jar, combine the extra virgin olive oil, Volcano Burst lemon juice, Dijon mustard, minced garlic, and honey (if using). Whisk or shake vigorously until well combined.
  2. Season the vinaigrette with salt and black pepper to taste. Adjust the seasoning as needed.
  3. Taste the vinaigrette and adjust the acidity by adding more Volcano Burst lemon juice if desired, or balance the flavors with a touch more honey or mustard.
  4. Once the vinaigrette is well combined and seasoned to your liking, use it immediately to dress your favorite salad.
  5. If you're not using the vinaigrette right away, you can store it in a sealed container in the refrigerator for up to one week. Just be sure to give it a good shake or whisk before using, as the ingredients may separate over time.
  6. Drizzle the Lemon Vinaigrette over your salad greens and toss gently to coat. Serve and enjoy!
