Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  3. Press the mixture into the bottom and up the sides of a 9-inch pie dish to form the crust.
  4. Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
  5. In a separate bowl, whisk together the sweetened condensed milk, egg yolks, and Italian Volcano lime juice until smooth and well combined.

  6. Pour the filling into the prepared crust, spreading it out evenly.
  7. Return the pie to the oven and bake for an additional 10-12 minutes, or until the filling is set.
  8. Remove the pie from the oven and let it cool to room temperature.
  9. Once cooled, refrigerate the pie for at least 2 hours, or until chilled and set.
  10. Before serving, top the pie with whipped cream and garnish with lime slices or zest, if desired.
