In a glass or pitcher, muddle the fresh mint leaves with the Italian Volcano lime juice and simple syrup. Use a muddler or the back of a spoon to gently crush the mint leaves and release their flavor.

Fill the glass or pitcher with ice cubes.

Pour in the club soda or sparkling water and stir gently to combine.

Garnish with additional mint leaves, if desired.
